Almond Delight

A hearty, savory casserole of browned breakfast sausage, wild rice, and toasted slivered almonds baked together with vegetables and chicken noodle soup mix for incredible depth of flavor. Cozy, crowd-pleasing, and surprisingly elegant.

  1. Preheat your oven to 375°F (190°C). Set a large 5.5-quart or larger Dutch oven over medium heat on the stovetop.
  2. Add a small drizzle of oil if needed and sauté the diced onion, celery (if using), and bell pepper together until the onion is translucent and the vegetables have softened, about 5–7 minutes. Remove the vegetables from the Dutch oven and set aside.
  3. In the same Dutch oven, add the ground breakfast sausage and cook over medium-high heat, breaking it up as it browns. Drain excess fat if desired, leaving a small amount for flavor.
  4. Return the sautéed vegetables to the pot. Add both packages of dry chicken noodle soup mix, the wild rice, the white rice, the slivered almonds, and the broth. Stir everything together until evenly incorporated.
  5. Cover the Dutch oven with its lid and transfer to the preheated oven. Bake for 45–60 minutes, or until the wild rice is fully tender and has absorbed most of the liquid. Wild rice may require the full 60 minutes or slightly longer. If using a glass casserole dish instead, expect additional cooking time of 10–20 minutes.
  6. Remove from the oven, stir gently, and let rest covered for 5 minutes before serving.
