  1. Thinly slice the red onions and place them in a large heatproof jar or bowl.
  2. In a saucepan, combine the rice vinegar, water, sugar, salt, oregano, cinnamon sticks, and bay leaves.
  3. Heat the brine over medium heat until it reaches a simmer. Do not let it boil.
  4. Pour the hot brine over the sliced onions, making sure they're fully submerged.
  5. Let cool to room temperature, then cover and refrigerate for at least 1 day before eating.
